Cooking with a dutch oven is one of the best parts of camping. But before you can use a new one for the first time, you need to season it. (It doesn't hurt to season it at least once a year, too.) Here's how.
Preheat your (kitchen) oven to 450º F. Wash your dutch oven with hot, soapy water (and a stiff brush, if you have one).

Rinse and dry, then put in the oven for a few minutes to drive the water out of the pores of the iron.

Remove from the oven and let cool. Then oil inside and out with vegetable shortening or a vegetable oil. Don't use animal fat-based oils; they'll go rancid quickly. Bake in your oven for an hour. (You'll want to turn off your smoke detectors and open some windows: it's gonna smoke.)

Turn your oven down to 200º F and bake for another hour. Turn off the oven and let cool slowly.
